Elevage is for 22 months in a combination of wooden vats (40%) and tank (40%) and 500-litre demi-muids (20%)

The distillery itself has embraced modern techniques for its distillation process and has become the first 100% biomass heated distillery in Scotland

Only 2Ha of ungrafted vines in a prime Etna location make up this estate which farms organically

Old bush vines with very small yields and a short amount of time in contact with the skins result in a wine with more texture and some delicious orange peel notes
